1 Cup Butter (at room temperature)
1 Cup Granulated Sugar
1 Cup Packed Brown Sugar
1 Large Egg
1 Tsp. Vanilla
1 Cup Vegetable Oil
1 Cup Rolled Oats
1 Cup Crushed Cornflakes
1/2 Cup Shredded Coconut
1 Cup Chopped Pecans or Walnuts, toasted
3-1/2 Cup Sifted all-purpose flour
1 Tsp. Baking Soda
1/2 Tsp. Salt
Method:
Cream together butter and sugars until light and fluffy. Add egg and vanilla and mix well. Then add
Vegetable Oil and mix well. Stir in oats, cornflakes, coconut and pecans.
Mix flour, soda and salt and add to first mixture. Mix well and chill dough for 30 minutes. Form into
balls the size of a walnut and place on an ungreased cookie sheet. Flatten with a fork dipped in
water. Bake in a 350 degree oven for 10-12 minutes or until lightly browned.
Cool on wire racks and store in Cookie Tins.
