Salmon tartare

1 salmon fillet skin removed | |
2 tbsp | red onion minced |
2 tbsp | capers, drained and chopped |
1 tsp | lemon zest finely grated |
3 tbsp | olive oil |
2 tsp | fresh dill finely chopped |
2 tsp | fresh chives finely chopped |
Salt | |
pepper to taste |
With a knife remove brown fat and bones from salmon. Cut fillet into small dice and place in bowl. Add all other ingredients and stir gently to combine. Taste and adjust seasoning if required. Serve immediately.
