Coq au Vin

Ingredients
2-1/2-3 Lbs. Chicken
1 T. Onion, chopped
1/2 Cup Red Wine
1 Clove Garlic, minced
1 Bay Leaf
12 Small White Onions
1 Cup Fresh Mushrooms sliced
4 Slices French Bread, fried in butter
2 T. Oil
1 T. Flour
1/2 Cup Chicken Broth, clear
1/2 Tsp. Thyme
Method:
In a large skillet, cook chicken and onion inb oil until browned. Stir
in flour until well browned. Add wine, chicken broth, garlic, bay leaf,
thyme, white onions and mushrooms. Bring to boil. Cover and
simmer for 45 minutes. Garnish with slices of fried bread.
Serves 4
