Ingredients:

2 T. Butter, melted
2 Cups Peeled, sliced apples, about 3 small
3/4 Cups Packed Brown Sugar
1/2 Tsp. Ground Nutmeg or Cinnamon

For the Batter:
1/2 Cup Granulated Sugar
1/4 Cup Vegetable Oil
1 Large Egg
1/2 Cup Unsweetened Apple Sauce
1 T. Grated Lemon Rind
1 Tsp. Vanilla
1 Cup All-Purpose Flour
1 Tsp. Baking Powder
1/2 Tsp. Each Baking Soda and Ground Nutmet
Pinch of Salt
Method:
Brush bottoms and sidew of 12 Cup Muffin Pan with Butter. Divide apples
among cups, cutting to fit. Combine brown sugar and nutmet; sprinkle
1T. over apples in each cup.
For the Batter:
In a small bowl stir to-gether sugar, oil, egg, applesauce, lemon rind
and vanilla until blended. In a medium bowl, combine flour, baking
powder, baking soda, nutmeg and salt; stir in liquid mixture until
combined. Spoon batter evenly over apples in each cup.
Bake in 350 Degree F. oven for 15-20 minutes or until golden
brown and toothpick inserted in centre of cake comes out clean.
Let cool in pan on wire rack for 5 minutes. Run thin metal spatula
around rim of cups and turn out. Serve Warm.
