Hawaiian Pineapple Cake

Ingredients:
2 Cups Unsifted Flour
2 Tsp. Cinnamon
1/2 Tsp. Salt
1-1/2 Cups Sugar
2 Tsp. Baking Soda
1/2 Tsp. Nutmeg
3 Large Eggs
3/4 Cup Mayonaisse
1 Can Crushed Pineapple, undrained
2-1/2 Cups Shredded Carrots
3/4 Cup Pecans, toasted
Method:
Grease 9 x 13 inch baking dish. Stir to-gether first five ingredients.
In a large bowl, beat eggs, sugar, mayonaisse, plus pineapple, until
well blended. Gradually stir in flour mixture, then carefully stir in very
lightly floured carrots and pecans. Turn into pan and bake at 350 Degrees F.
oven for 1 Hour (Tube Pan) or 50 minutes for 9 x 13 baking dish o
until well done when tested. Cool and remove from pan.
