Buttermilk rusks

    3 x 500g  self-raising flour
    2 cups  sugar
    500g  butter
    500ml  buttermilk
    3 large  eggs
    1 t  BP
    Pinch  salt

Sieve dry ingredients. Rub in butter till mixture resembles fine breadcrumbs. Add sugar and mix well. Add beaten eggs, then buttermilk. Mix together. Form into balls and bake at 180 deg C for one hour. Remove from oven, break into pieces and dry in oven at 90 deg C until crisp and dry.
