    1/2 cup  toasted wheat germ
    1/3 cup  old-fashioned rolled oats
    3 tablespoons  flax meal
    2 tablespoons  sesame seeds
    2 teaspoons  vegetable oil
    1/4 cup  flour
    1 large  egg
    1 tablespoon  water
    1 1/2 pounds  chicken tenders
      salt, (optional)
DIRECTIONS Preheat the oven to 350°F. Generously oil a rimmed baking sheet. In a food processor, pulse the wheat germ, oats, flax meal, sesame seeds, and oil until coarsely ground. Transfer to a shallow bowl. Place the flour in a shallow bowl. In another shallow bowl, lightly beat the egg with the water. Dredge the chicken in the flour, shaking off the excess. Then dip in the egg, allowing excess to drip off. Next dredge the chicken in the oat mixture, pressing to adhere. Place the chicken on the baking sheet. Bake for 15 minutes, without turning, until the chicken is crisp and cooked through. If desired, sprinkle with salt before serving. NUTRITIONAL FACTS PER SERVING CALORIES 673.5 CAL
