APPETIZERS - Crostini Caprese

16 slices | french bread, cut 1/4 inch thick |
2 | plum tomatoes |
1 8 oz log fresh mozzarella cheese | |
1/4 c | prepared basil pesto |
1/2 oz | grated fresh parmesan cheese,, (about 2 tbsp) |
1/4 c | snipped fresh basil leaves |
Preheat oven to 350. Arrange bread slices on flat baking stone. Lightly brush bread with olive oil; bake 10-12 minutes or until lightly browned. Remove from oven.
Cut tomatoes into 16 slices. Cut mozzarella cheese into 16 slices about 1/4 inch thick. Spread pesto evenly over bread slices; top with mozzarella cheese and tomato slices. Bake 7-8 minutes or until edges of bread are light golden brown and cheese begins to melt; remove from oven. Immediately sprinkle with Parmesan cheese and basil; serve warm.
