Stampede Pancakes

    8 c.  flour
    1/3 c.  baking powder
    1 tsp  salt
    1 tsp.  cinnamon
    1/4 c.  flour
    6  eggs, well beaten
    8 c.  milk
    1/4 c.  oil
    1 tbsp  vanilla extract.

Combine flour, baking powder, salt, cinnamon, and sugar.
In another bowl, mix egg with milk, oil and vanilla.
Add liquid to dry igredients, mixing until just fully incorporated.

Preheat a little oil on a non-stick griddle, then spread some batter on the griddle according to the size of pancakes you want.
Cover and cook until surface is covered with little bubbles, flip and cook for 1-2 minutes or until thoroughly cooked.

Serve with fresh fruit, home-made fruit sauce, or maple syrup.
