Plain Muffins

250 ml | flour |
30 ml | sugar |
10 ml | baking powder |
2 ml | salt |
1/2 | egg |
125 ml | milk |
30 ml | oil |
Combine sifted flour with all other dry ingredients in large bowl
Mix all wet ingredients in second bowl. Blend thoroughly
Add wet ingredients to the dry ingredients and stir just until moistened (17-20 strokes)
Fill 4-5 greased muffin tins until 2/3 full
Bake at 425 F for 20 minutes
Variations
1. Jelly muffins - half fill muffin tin with batter, add 1 ml jam, cover with batter
2. Raison muffins - add 50 ml of raisins to dry ingredients
3. Spice muffins - add 2 ml of spices (cinnamon, nutmeg, cloves) to dry ingredients
4. Sugar topped muffins - mix 15 ml of sugar and 2 ml cinnamon. Sprinkle on top before baking
5. Fruit - add 100 ml blueberries, chopped cranberries, or apples during last strokes of mixing batter
6. Cheese - add 50 ml grated cheese to dry ingredients.
