Chinese Fried Rice

3 Tbsp | butter |
1/2 c. | green onions and tops |
1 c. | celery, diced |
1 c. | mushrooms, sliced |
2.5 c. | cooked rice |
2 tbsp | soy sauce |
1 | egg, slightly beaten |
Melt butter in skillet
Add onions and celery and cook until almost tender
Add mushrooms, rice and soy sacuue
Cook 10 minutes on low heat, stirring occasionally
Stir in beaten egg and cook until it is in little lumps
