Almond Cookies

2 c. | blanched almonds |
1 1/4 c. | granulated sugar |
1 1/4 c. | icing sugar |
1 tsp | vanilla extract |
2 | egg whites |
36 thin vanilla waffers
Blend almonds then slowly add granulated sugar until pulvarized. Add 1 cup of icing sugar, vanilla, egg whites and blend briefly. Sprinkle with remaining icing sugar, reserving some for later. Place a spoonful on each wafer and flatten each into almond shopes.
Arrange on cookie sheet and let stand for 12 hours.
Preheat oven to 250F and put cookies in oven. Turn off heat and leave cookies in oven for 3 hours. Cool on wire rack until cool. Sprinkle with icing sugar. Store in tight container.
