Classic Chicken Divan

20 oz | frozen brocooli spears |
1/4 c | butter |
1/4 c | flour |
2 c | chicken broth |
1/2 c | heavy whipped cream |
3 T | cooking sherry |
1/2 t | salt |
3 | chicken breasts, cooked and thinly sliced |
1/2 c | grated parmesan |
Boil chicken breasts until done, chill, and slice.
Cook broccoli in boiling salt water until tender. Drain. Place spears crosswise in a 9 x 3 baking dish. Melt butter in a saucepan; blend in flour. Add chicken broth all at once and cook stirring constantly until mixture thickens. Stir in cream, sherry, salt, and a dash of pepper. Pour half the sauce, add 1/4 cup parmesan cheese, pour over chicken and sprinkle with additional cheese. Bake 350 degrees for 20 minutes then broil just till sauce is golden brown.
