Creamy Tomato Vodka sauce

1 tablespoon 100% | pure olive oil |
3 | garlic cloves, minced |
1 small | onion, finely chopped |
2 | bacon strips, finely chopped |
1-1/2 cups | whipping cream |
1/4 cup | vodka |
1/2 tsp | salt |
1/2 tsp | pepper |
1 can | tomato paste |
4 cups | penne rigate |
1/4 cup | Parmesan cheese |
Heat oil in saucepan over medium heat. Stir in garlic, onion and bacon. Cook 5-7 minutes or until lightly browner. Stir in cream, vodka, salt, pepper and tomato paste. Reduce heat and simmer 10 minutes. Meanwhile, in a large pot of boiling, salted water, cook pasta 11 minutes, or until tender but firm. Stir 2 tbsps Parmesan cheese into tomato sauce. Add pasta and toss to coat. Sprinkle with remaining Parmesan and serve.
