1 tablespoon | cream of tartar |
1 1/2 tsp | baking soda |
5 cups | sifted all purpose flour |
1 Tblsp | kosher salt |
11/4 stick | cold unsalted butter, cut into pieces |
2 cups | cold buttermilk |
3 Tblsp | butter, melted |
1. Preheat oven to 450 degrees
2. Sift cream of tartar and soda into large bowl. Whisk in flour and salt, then and butter. Working quickly, rub the mixture between fingertips or use a pastry cutter until half is coarsely blended and the remaining pieces are clumpy.
3. Add the buttermilk and stir until a sticky dough forms.
4. Turn the dough onto a floured surface. Knead until it forms a ball. Flatten the dough and roll it out until it is 1/2 to 3/4 " thick.
5. Cut the dough into 2 1/2" rounds. Place on an ungreased cookie sheet, about an inch apa.
6. Bake until golden, about 15 minutes. While biscuits are still hot, brush with melted butter.
