Berry muffins

Ingredients: 1 egg slightly beaten | |
1 cup | yogurt |
1/4 cup | margarine |
1 cup | whole wheat flour |
1 cup | quick cooking oats |
1/4 9 grain or multigrain cereal | |
1/2 cup | packed brown sugar |
2 tsp | baking powder |
1 tsp | ground cinnamon |
1/2 tsp | baking soda |
1/4 tsp | ground nutmeg |
1/4 tsp | salt |
1 cup | blueberry, fresh or frozen |
Direction:
Heat oven to 400F
Line 12 medium or 6 large muffin cup with paper baking cups.
Mix all ingredients except blueberries until flour is just moistened ( batter will be lumpy) .
Fold in blueberries
Divide batter evenly among muffin cups.
Bake 20-25 minutes for medium and 28-30 minutes for large muffins or until golden brown and a wooden skewer comes out of muffin centre comes out clean.
Cool slightly in pan, then remove to cooling rack. Store in a airtight container to maintain freshness.
