1 can | corn, drained |
1can | blackened peas, drained |
2/3 c. | Chopped green onion |
1/2lb. | Roma tomatoes, chopped |
2/3c. | Cilantro, chopped |
1 | avocado, chopped |
Dressing: | |
2 T. | Red wine vinegar |
2 tsp. | hot sauce |
1 1/2 tsp. | oil |
1 tsp. | minced garlic |
Dash | pepper |
Juice of 1/2 | lime |
Mix together corn, peas, tomatoes, green onions, and cilantro. In a separate bowl mix together red wine vinegar, hot sauce, oil, garlic, and pepper. Pour over corn mixture. Squeeze juice of 1/2 of lime over mixture. Top with avocado when ready to serve. Serve with tortilla chips
