Tilapia Stir Fry

    1 Cup  Water
    3/4 Cup  Fit & Active Brown Rice
    1 Clove  Garlic
    1/2 Ounce  Red Sweet Pepper
    1/2 Ounce  Green Bell Pepper
    1 Ounce  Sweet Peppers
    1 Ounce  Yellow Onions
    1-1/2 Ounce  Red Onions
    1-1/2 Ounce  Mushrooms
    1-1/2 Tsp.  Olive Oil
    1 Tbs.  Bangkok Padang Peanut Sauce
    4 Ounce  Tilapia

Step 1:
Place water in a small pot and bring to a boil, then add rice.
Cover and reduce heat, simmering until water has been absorbed stirring occasionally.
When rice is finished remove from heat and set aside.

Step 2:
While the rice is cooking chop your garlic, peppers, onions, and mushrooms.
Add olive oil to medium sauté pan and bring to high heat.
Add vegetables and fry for 5 minutes stirring constantly.
Remove from heat and set aside.

Step 3:
Pull apart tilapia and cover in Peanut sauce.
Add to sauté pan and fry for 1 minute.
Then add vegetables.

Step 4:
Place rice on a plate and top with stir fry.

Enjoy.
