Christmas Rice (DR) Arroz Navidena

| 1 lb | bacon, fried |
| 2lbs | rice |
| 1 med | onion, chopped |
| 2 TBS | oil |
| 1 cup | raisins |
| 1 lg | red or yellow peppers, chopped |
| 1 cup | canned corn |
| 6 cups | water |
Heat oil in kettle.
Add bacon, onion, raisins, pepper and corn; sauté slightly.
Add water; bring to a boil. Add rice; stirring occasionally.
When the water is absorbed, cover kettle tightly. Turn burner to extremely low heat. Allow to simmer for 15mins.
Serves 10
