Ingredients
    6-7 medium  Zucchini
2 Tbspn Olive oil 2 Tbspn minced garlic 2 Tspn dried thyme
    4  eggs
    2/3 Cup  light sour cream
    1 Cup  crumbled feta cheese
    1/2 Cup  Parmesan cheese
2 Tbspn lemon juice
    1 Cup  seasoned bread crumbs
      salt
      pepper

Preparation
1. Preheat oven to 375 degrees
2. Spray a large casserole dish with nonstick spray
3. Slice Zucchini into 1/4" slices

Instructions
1. Heat oil in a large non-stick frying pan
2. Add zucchini, garlic and thyme
3. Sauté until zucchini soften slightly. Remove from heat
4. Beat eggs, sour cream, cheeses and lemon juice in and set aside
5. Place 1/2 of the zucchini in the casserole dish
6. Season to taste with salt and pepper
7. Spread 1/2 of the egg mixture over the top. Repeat with remaining zucchini and egg mixture.
8. Top casserole liberally with bread crumbs
9. Bake for 45 minutes
