Zuchinni Bread

* preheat oven to 325 degrees | |
1 c. | sugar |
1 c. | brown sugar |
2 c. | zuchinni, grated |
3 c. | flour, sifted |
3 | eggs, beaten |
1 c. | vegetable oil |
1/2 tsp. | baking powder |
2 tsp. | cinnamon |
1/2 c. | nuts, chopped |
3 tsp. | vanilla |
1 tsp. | soda |
1 tsp. | salt |
Directions:
- combine sugars, oil, and eggs and beat until blended
- add the zuchinni and vanilla
- sift the flour, salt, soda, cinnamon, and baking powder then add to the mixture
- grease and flour 2 loaf pans and distribute evenly
- bake for 1 hour
