Jen Sneller's wild rice soup

1/2 cup | wild rice |
1 lb | bacon |
3 tbsp | bacon drippings |
3/4 cup | chopped celery |
1 cup | chopped onion |
1/3 cup | chopped green pepper |
2 - 14oz can | chicken broth |
1 - 4oz can | mushrooms |
3 - 10oz can | cream of mushroom soup |
Wash wild rice - boil rice for 15 min and drain -- set aside
Fry bacon until crisp. Remove bacon and discard all but 3 tbsp drippings. Sauté celery, onion, and peppers in drippings until onion is transparent. Put in large kettle and add rice, broth, mushrooms, soup and diced bacon. Cook on low heat for 1 hour or more. Do not add salt.
