British bangers and modern mushy peas

2 tsp | vegetable oil |
5 English style sausages about 1 lb 1 garlic clove minced | |
1 tbsp | honey |
4 cups | frozen peas |
2 tbsp | butter |
1/4 cup | milk |
1/2 tsp | salt |
2 tsp | fresh thyme |
1. Bring a pot of water to a boil.
2. Heat a large frying pan over med heat. Add oil, then sausages. Cook, turning twice, until browned, about 6 min. Add 1/4 cup water and gently boil, covered for 6 min. Remove lid and stir in garlic and honey. Cook until sausages are dark golden, about 3 min. Remove from heat.
3. Add frozen peas to boiling water and cook until tender, about 4 min. Drain peas and transfer to food processor. Add butter, milk, and salt. Whirl until well puréed about 3 min. Season with pepper and stir in thyme,
4. Slice each sausages in 3 pieces serve over mushy peas
