Split Pea Soup

3 lbs. | split peas |
4 | bay leaves |
4 Tbs | Chopped parsley |
2 strips | bacon |
1/4 cup | olive oil |
24 cups | Veg broth-, (8 cps/lb of peas) |
4 Med | Onions-,, (~1 1/2 / lb of peas) |
3 Tbs | chopped fresh thyme |
9 | carrots-,, (3 / lb of peas) |
6 Tbs | lemon juice-,, (2 / lb of peas) |
1 Tbs | Cumin |
1 med bunch | scallions thinly sliced |
6 ham knuckles | |
1/2-1lb | smoked ham cut in thick slices and cubed |
Salt | |
pepper to taste |
Directions:
1) In large iron kettle cook two strips of bacon
2) drain off most of bacon fat and add olive oil
3) Over medium heat, add carrots, onions, celery, 1Tbs thyme, salt and pepper
4) Cook 10 minutes until tender
5) Add vegetable stock, ham knuckles, peas, bay leaves, scallions, cumin,and rest of chopped thyme.
6) Simmer for two hours and remove bay leaves, ham knuckles, strips of bacon
7) Add cubed ham and ham from knuckles and let sit for 30 minutes.
