    8 c.  Water,, (105•)
    3 c.  Sugar
    2 tbsp.  Salt
    3 c.  Gluten
    1/3 c.  Yeast
      freshly ground Flour

1) Combine water, sugar and salt in mixing bowl.
2) Check water temp. (should be bath water temp.)
3) In separate bowl, combine yeast, gluten and about 3 c. flour. Whisk together.
4) Add dry ingredients to wet ingredients in mixing bowl.
5) Turn mixer on low.
6) Continue adding flour until dough ball forms.
7) Spritz dough with water and/or oil.
8) Cover and allow to rise about 30 minutes.
9) Divide into 8 pieces and form into loaves.
10) Let rise 30 to 40 minutes.
11) Bake at 325 degrees for 35 to 40 minutes or until internal temperature is 190 to 200 degrees.
