16 oz | frozen artichoke hearts, roasted w/ EVOO S/P |
1/4 cup | sun dried tomatoes, chopped finely - pulse in food processor |
8-10 | button mushrooms, roasted & chopped finely - pulse in food processor |
1/4 cup | kalamata olives, chopped finely - pulse in food processor |
1 bunch | scallions, sliced thinly |
1/4 cup | parsley, chopped finely |
2 T | dijon mustard |
salt | |
pepper to taste | |
Roast artichoke hearts & mushrooms in oven at 400 f/ approximately 30 minutes Chop artichokes, mushrooms, sun dried tomatoes, scallion, olives & parsley very fine - pulse chop in food processor | |
Mix chicken, mustard, s/p, and vegetables well
Form into 6 patties & sear in very hot pan with minimal oil
