HH Chess Pie
Nb persons: 8
8 T | butter,, (1 stick) |
2 c | sifted, cake flour |
1/4 t | salt |
3 | -6 T ice water |
Filling: | |
1/2 lb | butter, (2 sticks) |
2 c | sugar |
7 | egg yolks, beaten |
1 1/2 t | vanilla |
1/2 c | heavy cream |
2 T | cornmeal |
Cut butter into dry ingredients. Slowly add ice water. Knead dough and roll out on dough board, press into bottom and sides of 9in pie pan.
Preheat oven to 350F
Cream butter and sugar; add egg yolks, vanilla, and cream. Gently blend in cornmeal. Pour into chess pie pastry. Bke until light brown on top, about 35-45 minutes.
