Chili Skillet Supper

1# | ground beef |
1 c | chopped onion |
1/2 c | chopped green pepper |
1 clove | garlic |
1 c | tomato juice |
tomatoes, alternative | |
1 c | kidney beans |
5 t | chili powder |
1 t | diced oregano |
1 t | salt |
1/2 c | uncooked long grain rice |
1 can | corn undrained |
1/2 c | black olives optional |
1 c | shredded cheddar or Monterey cheddar |
Combine first 4 ingredients, cook and drain
Add next 6 ingredients, simmer, cover and cook 20-25 minutes or til rice is tender.
Stir in next 2 ingredients, cook 5 minutes.
Sprinkle with cheese, cover and simmer until cheese melts.
