Ginger honey glazed carrots

| 1/2 cup | butter |
| 1 tablespoon | fresh ginger zest, or to taste |
| Sprinkle | nutmeg |
| 1/2 to 1 cup | brown sugar |
| 1 tablespoon | cornstarch |
Melt butter in pan
Add ginger zest then brown sugar
Cook until sugar dissolves
Mix cornstarch to small amount of water to thicken glaze
Cook carrots, steam or cook in pan until cooked but slightly crunchy.
Drain and add to glaze....serve immediately . Enjoy
