Thai Chicken Noodle Soup

2 | chicken breast cubed |
1 | garlic clove |
2 tsp. | chili paste |
2 tsp. | cooking oil |
2 tbsp. | peanut butter |
2 cups | chicken broth |
2 cups | water |
1 cup | coconut milk |
2 tbsp. | lime juice |
70 g. | Oriental steam fried noodles |
1/4 cup | grated carrot |
1 | sliced green onion |
1 tbsp. | fish sauce |
Sprinkle | pepper |
Chopped fresh cilantro for garnish |
1. Put chicken, garlic and paste in small bowl mix until chicken is coated
2. Heat cooking oil in large sauce pan on med. add chicken mixture. Heat and stir for 2-3 min.
3. Add peanut butter. Heat and stir for 1 min.
4. Add next 4 ingredients. Stir cover. Bring to a boil on med-high.
5. Add noodles and carrot. Reduce to medium-low. Cover and simmer for 5 min.
6. Add next 3 ingredients. Simmer for 5 more min.
7. Garnish with cilantro. Makes 6 cups
