Fiery Roasted Red Salsa

4 | plum tomatoes |
1/2 small | red onion |
2 long red chili peppers halved length wise | |
2 tbsp. | olive oil |
1/4 tsp. | salt |
1 | garlic clove |
1 tsp. | red wine vinegar |
1. Preheat oven to 400f. Toss tomatoes, red onion and chili peppers with oil and salt on a large baking sheet.
2. Bake until golden brown about 25 min. Set aside and cool.
3. Whirl tomatoes garlic and vinegar in processor til puréed. Serve with tortilla chip or as any salsa substitute. 6 servings. 59 cals per serving
