8 | boneless chicken thighs,, (2-3 pounds) |
1/4 cup | flour, seasoned with garlic salt |
1/4 cup | olive oil |
1 cup | diced onion |
1 cup | diced green pepper |
1-2 medium clove (or 1 teaspoon) | garlic minced |
1 can | tomato sauce |
1 can | diced tomatoes |
1/3 cup | water |
1 tbs. | chopped parsley |
1/2 teaspoon | oregano |
1/2 teaspoon | basil |
1/4 teaspoon | thyme |
3/4 teaspoon | salt |
Generous dash | pepper |
1/4 pound | fresh mushrooms, sliced |
Coat chicken pieces with seasoned flour. Heat olive oil in deep skillet and brown chicken pieces on all sides. Remove chicken from skillet and set aside. Sauté onion, green peppers and garlic in skillet. Mix in tomatoes, tomato sauce, water, seasonings and mushrooms. Add chicken and cover. Simmer over low heat, stirring occasionally, for 45 mins, or until chicken is fork tender.
Serve with garlic seasoned pasta or hash browns.
