Beer Battered Baby Octopus With Lime

30ml | Olive oil |
3 | Garlic cloves, grated |
1 | Red chili |
1 | Green chili |
2 | Limes, 1 zested and juiced and other segmented |
300ml | Beer |
100g | Corn flour |
200g | Rice flour |
Salt | |
pepper | |
1 Can | coconut cream |
300g | Baby octopus, cleaned and halved |
Method
In a bowl add grated garlic, lime zest, lime juice and lime segments.
Finely slice both chilies and add to the bowl along with olive oil and octopus and mix well. Leave to marinade for 10-15 minutes.
Mix both flours together in a large bowl and whisk in beer until you get a lump free batter.
One at a time coat the octopus in the batter and deep fry until golden. Remove from oil and drain on kitchen paper.
To make dipping sauce add remaining marinade mix to a saucepan and bring to the boil. Add coconut cream and heat through. Serve along side octopus.
