1 2/3 cup | mashed banana |
1/2 cup | packed brown sugar |
1/2 cup | white sugar |
3 Tb | butter melted and cooled |
1/4 cup | milk |
6 tb | vanilla yogurt |
1 tb | vanilla |
2 large | eggs lightly beaten |
2 cups | flour |
1 tsp | baking soda |
1/2 teas salt | |
1 tsp | cinnamon |
1/2 tsp | ground coriander |
1/4 teas nutmeg
preheat oven to 350. Lightly grease muffin tins. blend the brown and white sugar together. add the cooled butter and stir into the sugar mix until fully absorbed. add the milk, yogurt, eggs and vanilla to the bowl and stir until combined. add the mashed bananas and stir will. in a separate bowl combine the flour, baking soda, salt and spices and stir to combine. add half of the flour mixture to the wet mixture and fold in until it is just barely combined. repeat with the remaining flour mixture, again stirring it in by hand until it is just barely combined, do not overbeat. Pour the batter into the prepared muffin pan. bake at 350 for 25-30 minutes or until done. let cool.
