Beef stew with bacon, onion and sweet potatoes

1 lb | beef for stew, cut into 1-inch chunks |
1 can | beef broth, (14.5 oz) |
2 medium | sweet potatoes peeled and cut into 2-inch chunks |
1 large | onion cut into 1.5, inch chunks |
2 slices | thick cut bacon diced |
1 tablespoon | dried thyme |
1 teaspoon | salt |
.25 teaspoon | black pepper |
2 tablespoons | if cornstarch |
2 tablespoons | water |
1. Coat crockpot with non stick cooking spray. Combine all ingredients except cornstarch and water into cooker and mix well, cover cook in low for 7-8 hours
2. Transfer into serving bowl solid contents
3. Turn cooker in high. Separately combine the water and cornstarch and stir until smooth. Add to cooking liquid and cook for 15 min. Spoon over beef and veg when thick.
