Zucchini Bread

3 | eggs, beaten, |
1 1/2 c. | sugar |
3 t. | vanilla |
1 c. | oil |
4 c. | peeled and shredded zucchini |
1/2 t. | salt |
1 t. | baking soda |
1 t. | baking powder |
3/4 t. | nutmeg |
1 t. | cloves |
3 t. | cinnamon |
1 c. | chopped pecans |
3 c. | flour |
Mix all ingredients together. Grease and flour 2 loaf pans. Bake at 350° for 1/2 hour. Cover with foil and bake for an additional 1/2 hour.
