PUMPKIN SOUP
Nb persons: 6
2 T | butter |
2 | shallots |
2 | - 15 oz cans pumpkin |
4 c | chicken broth |
2 T | curry powder |
salt | |
pepper | |
1 can | coconut milk |
Saute shallots in butter. Add chicken broth, pumpkin & spices. Simmer 20 miuntes. Add coconut milk, simmer 5 minutes and serve.
Optional garnishes: whipping cream, fresh cilantro, or sour cream.
