4 Large | Bananas |
3/4 cup | sugar |
2 tablespoons | butter |
1 large | egg plus 1 large egg white |
1teaspoon | pure vanilla |
1 cup | flour |
1 teaspoon | baking powder |
1 teaspoon | cinnamon |
1/4 teaspoon | salt |
1/2 cup | vegetable oil |
preheat oven 325,grease loaf pan,half bananas trim ends.
in large skillet,bring1/4 cup sugar and 2 tablespoons water to boil without stirring cook until waters gone and sugar turns amber,remove from heat and stir in butter with fork,add long banana pieces cut side down and cook over low heat for 1 minute,transfer to loaf pan cut side down,drizzle remaining sugar on bananas
Mash banana pieces to equal 1 cup,mash in remaining 1/2 cup sugar.Beat in egg,egg white,and vanilla.
In large bowl,whisk the flour and baking powder ,cinnamon,and salt,add the banana mixture and oil,whisk until blended,pour batter over bananas and bake until toothpick comes out clean,50 to 55 minutes let cool 10 minutes and invert onto plate
