Buttermilk Vanilla Cupcake with Fresh Pineapple, Dried Cherries, Toasted Coconut, & Toasted Macadamia Nuts with Buttermilk Cream Frosting topped with Sugared Dried Cherries, Sugared Dried Pineapple, Toasted Coconut and Toasted Macadamia Nuts. 1 Duncan Hines Vanilla Cake Mix
    1/2 Cup  Flour, (Sifted)
    1/2 Tsp.  Baking Powder
    2 tsp.  real vanilla
    2/3 Cup  Buttermilk
    1/2 Cup  Softened Butter, (1 Stick)
    3 large  eggs
    1/2 cup  finely chopped fresh pineapple
    1/3 cup  finely chopped dried cherries
    1/2 Cup  Macadamia Nuts Chopped and Toasted
    1/2 Cup  Toasted Coconut
Frosting –
    1 Stick  Softened Real Butter
1 16 oz. Bag Powdered Sugar
    1 tsp.  Real Vanilla
    8 tbsp.  Buttermilk
Topping for Cupcake Frosting –
    2/3 cup  finely chopped dried cherries tossed in 2 tsp. of sugar.
    2/3 cup  finely chopped dried pineapple tossed in 2 tsp. sugar.
    1/2 cup  toasted chopped macadamia nuts
    2/3 cup  toasted coconut

Instructions
Mix Duncan Hines Yellow Cake Mix with 1/2 cup sifted flour and the 1/2 tsp. of Baking Powder.
Add in the stick of softened butter, the 3 large eggs, 2 tsp. of real vanilla and 2/3 cup of real buttermilk.
Then toss in the 1/2 cup chopped fresh pineapple, the 1/3 cup chopped dried cherries, the 1/2 cup of toasted macadamia nuts, and the 1/2 cup of toasted coconut.

Using a ice cream scoop – place 1 scoop into each cupcake liner and bake at 350 degrees for 25 – 35 minutes depending on your oven.

Cool on wire rack.

While cooling mix the frosting using the 1 stick of softened real butter, adding in the 16 oz. bag of powdered sugar alternately with real vanilla and the 8 tbsp. of buttermilk to make your frosting creamy and smooth.

Prepare toppings for the frosting by mixing 2/3 cup of chopped dried cherries in 1 tsp. of sugar…set aside.
Then mix 2/3 cup of chopped dried pineapple with 2 tsp. of sugar…set aside.
Then have 1/2 cup of toasted chopped macadamia nuts and 2/3 cup of toasted coconut set aside to top the frosting.

Fill a Piping Bag with your Buttermilk Cream Frosting and Pipe Frosting onto cooled cupcakes in a circular motion.

In the middle place a pinch of sugared chopped dried cherries.

Arrange sugared chopped dried pineapple around the cherries.

Then place the toasted chopped macadamia nuts around the pineapple.

And finally place the toasted coconut around the chopped macadamia nuts.
