This savory dressing adds pizzazz to your salad, plus it’s loaded with nutritional benefits! Olive oil is a healthy fat source, mesquite contains fiber, calcium and magnesium, and maca is an energizing superfood packed with minerals. The best part: the taste of this dressing is out of this world! Serves 6-8 people
    1 cup  olive oil
    1/4 cup  apple cider vinegar
    1/2 cup  sun-dried tomatoes, soaked in 1½ cup water
    2-3 cloves  garlic
    2 tbsp  mesquite powder
    1 tsp  maca powder
Kalahari Desert salt (to taste)
      cayenne pepper, (to taste)
    1 tbsp  yacon syrup, (to taste)

Soak the sun-dried tomatoes for one hour in advance. Blend the tomatoes, the flavored soak water, and all remaining ingredients in a high speed blender. Add additional water to reach desired consistency. Enjoy!
