This savory dressing adds pizzazz to your salad, plus it’s loaded with nutritional benefits! Olive oil is a healthy fat source, mesquite contains fiber, calcium and magnesium, and maca is an energizing superfood packed with minerals. The best part: the taste of this dressing is out of this world! Serves 6-8 people | |
1 cup | olive oil |
1/4 cup | apple cider vinegar |
1/2 cup | sun-dried tomatoes, soaked in 1½ cup water |
2-3 cloves | garlic |
2 tbsp | mesquite powder |
1 tsp | maca powder |
Kalahari Desert salt (to taste) | |
cayenne pepper, (to taste) | |
1 tbsp | yacon syrup, (to taste) |
Soak the sun-dried tomatoes for one hour in advance. Blend the tomatoes, the flavored soak water, and all remaining ingredients in a high speed blender. Add additional water to reach desired consistency. Enjoy!
