Caramel Corn

2 cups | brown sugar |
2 sticks | butter |
1/2 cup | corn syrup |
1 tsp. | salt |
1 tsp. | baking soda |
3 packages | micro popcorn, (any flavor but cheddar), popped |
Optional: | |
1/2 bag mini | chocolate chips |
10 oz. | coarsely chopped almonds |
1. Combine brown sugar, butter, corn syrup, and salt in sauce pan. Bring to a rolling boil. Boil for 5 minutes.
2. Remove from heat. Add baking soda. Mix quickly.
3. Pour over popcorn that has been spread out in a large baking dish or two broiler pans. Stir well.
4. Bake for 1 hour at 200 degrees, stirring every 15 minutes.
5. For "dirty" version, add 1/2 bag mini chocolate chips and/or 10 oz. of coarsely chopped almonds.
