Shredded pork for chile

1 1/2 lb | pork shoulder trimmed of fat |
lightly salted water about 3 cups 1/2 onion stuck with 2 cloves | |
2 cloves | garlic, peeled |
5 | peppercorns |
1/2 team whole cumin seed | |
pinch | oregano |
Place the meat in a saucepan, barely cover with water and add the remaining ingredients. Bring to a boil over medium heat, skim off the foam that rises, and cover the pan. Simmer gently for 45 minutes do not allow the water to boil. Turn off the heat and let the pork cool in its own broth.
Shred the meat.
