Grease small ceramic dishes with olive oil. Spoon a portion of sautéed veggies into each dish. Then pour the egg mixture into each bowl, covering the vegetables, leave between a 1/2-1" before the lip. Top with cheese. Bake for 20 minutes or until the eggs are set in the center.
