Crockpot Meatloaf

| 2.5 lbs | ground beef |
| 8 oz | salsa |
| 1 pkg. | taco seasoning, divided |
| 1 | egg, beaten |
| 1 c. | bread crumbs |
| 12 oz. | pkg. mexican cheese |
| 2 tsp. | salt |
| 1/2 tsp. | pepper |
| 1 bag | frozen brocolli, (or fresh) |
| 2 cans | carrots, (or fresh) |
combine all ingredients, except half of taco mix. Mix well. shape into loaf and place in crock. Sprinkle with remaining taco mix. cover and cook on Low for 8 to 10 hours. Serve with broc and carrots (either cooked or fresh)
