Val's Sunshine Muffins

4cups | flour |
2 cups | sugar |
4 tsps | baking soda |
6 tsps | cinnamon |
4 cups | grated carrots |
1 cup | dried apricots |
2/3 cup | toasted chopped pecans |
2/3 cup | chocolate chips |
2/3 cup | coconut |
2 | ripe bananas |
6 | eggs |
2 cups | light olive oil |
4 tsps | vanilla |
Combine flour, sugar, baking soda and cinnamon. Mix well
Stir in carrots, apricots, pecans, chocolate chips, coconut and bananas.
In a bowl, beat in eggs, oil and vanilla. Stir into flour mixture until just moist.
Spoon into greased muffin cups and bake at 375 degrees for 15 to 20 mins.
Makes approx 3-4 doz and freezes well.
