Chinese Chicken "Lo-Mein"

Steady blood sugar and rev weight loss with this favorite Chinese Chicken "Lo-Mein" Transform whole-wheat spaghetti noodles into a unique stir-fry. Simply toss chicken with tasty sesame oil and chopped ginger. Boost the antioxidant power by adding broccoli and bok choy, two cancer-fighting superfoods. Prep: 15 min Cook: 12 min Total: 27 min Serves: 6 Ingredients:
    16 ounces  whole wheat spaghetti
    1 head  broccoli, cut into florets
    1 small bunch  bok choy, coarsely chopped
    1 pound  boneless, skinless chicken breasts, cut into thin strips
    1/4 cup  stir-fry sauce
    1 teaspoon  sesame oil
    1 teaspoon  minced ginger
    pinch  ground black pepper

Directions:

1. PREPARE the spaghetti according to package directions.

2. MEANWHILE, heat a large wok or nonstick skillet coated with cooking spray over medium- high heat. Add the broccoli and bok choy and cook, stirring, constantly, for 4 minutes, or until tender-crisp. Remove to a bowl.

3. ADD the chicken to the pan and cook, stirring constantly, for 4 minutes, or until no longer pink. Add the vegetables and spaghetti.

4. IN a cup, combine the stir-fry sauce, oil, ginger, and pepper. Stir into the pan and cook, stirring constantly, for 2 minutes, or until heated through.
