Skillet Macaroni Dinner 1 & 1/2 lbs. Ground Beef | |
2 Tbsp. | oil |
2 medium | Onion, chopped |
1 - 28 oz. can | tomatoes |
1 - 12 oz. can | corn |
1 cup | Elbow Macaroni, (or whatever shape you want) |
1 Tbsp. | Chili Powder |
2 & 1/2 Tsp. Garlic Salt, (These days I would mince or finely dice a clove or two & not add all that salt!) 1 - 3 & 1/2 oz can of sliced Black Olives | |
1 - 4 oz. package | shredded Cheddar Cheese |
About 1 hour before serving: In a large Dutch Oven, (~5 quart pan), heat oil, cook the ground beef and onions, (and the garlic cloves), until meat is broken up and browned and onions are soft.
Drain excess grease as needed. Add the tomatoes, corn, macaroni & cook covered for 30 minutes or until the macaroni is tender. Stirring occasionally.
Stir in the chili powder, garlic salt, (if using it), & olives. Sprinkle the cheese over the top. Cover & continue to heat for 5 - 10 minutes. Serve. Makes a lot, ~ 8 servings. Can freeze this as well.
