Squash - Italian Saute

1.5 c | zucchini |
1.5 c | yellow summer squash |
1.5 c | crook neck squash |
1 c | onion, chopped |
1/2 c | tomato, skinned, seeded, chopped |
1 clove | garlic |
1/2 t | oregano |
olive oil |
Heat oregano in dry frying pan until fragrant. Add olive oil and minced garlic. Do not brown.
Add squashes and saute. Add chopped tomato at last minute. Serve with Parmesan cheese.
