Coq au Vin

serves: 4 Ingredients:
    3 lb  chicken cut in pieces
    3 T  butter
      oil, alternative
    2 slices  bacon
    .75 cup  onion, chopped
    1  carrot, sliced
    3  shallots, minced
    1 clove  garlic, minced
    2 T  flour
    2 T  minced parsley
    1 T  frsh chervil or marjoram
    .5  bay leaf
    .5 t  thyme
    1 t  salt
    .125 t  pepper
    1 T  brandy
    1.5 cups  dry red wine
      mushrooms

Melt butter (or oil) in frying pan and add bacon, onion,carrot,shallots, and garlic. Brown lighlty. Push aside.
Brown chicken in fat.and stir in flour,parsley, chervil, bay leaf, thyme, salt and pepper. Add red wine and brandy. Simmer over low heat about an hour or hour and a half. Keep covered. Add mushrooms last 5 minutes. Correct seasonings and Serve.
