Oatmeal White Chocolate Cookies

Oatmeal white chocolate cookies | |
1-1/2 cups | flour |
1 t | baking soda |
1/2 t | salt |
1 heaping teaspoon | pumpkin pie spice |
2-1/2 cups | oats |
1 stick | butter, softened |
1-1/2 cups | sugar,, (I use demerara, or pure cane sugar) |
2 large | eggs |
1 T | real vanilla extract |
2 T | honey |
1 - 5 oz. package | Craisins, (approx 1-1/4 cups) |
1 cup | white chocolate chips |
Preheat oven to 350. Beat softened butter with sugar till fluffy, then gently add eggs. Stir in vanilla and honey. Mix all dry ingredients together, then add gradually to butter mixture, combining well. Stir in Craisins and white chocolate chips. Drop by heaping tablespoonfuls onto a cookie sheet lined with parchment paper and bake 10 - 11 minutes. Makes 36 cookies.
